Champagne Wine Factory is the pride of New World. It was the production of champagne and wines at this plant that made the village famous far beyond the borders of the Crimea, thanks to the activities of the plant began its new history, which continues to this day.
Champagne factory in Novy Svet was founded by Prince Lev Sergeyevich Golitsyn in 1878 in the estate, which he acquired from General Kherkheulidzev, who grew the first vineyards there.
Prince Golitsyn is considered to be the founder of Russian winemaking in Crimea and industrial production of high quality champagne wines in the Russian Empire. He studied wine-making experience in France, where he learned how to produce sparkling wines using the classic French bottle method of champanization — natural rather than artificial.
Golitsyn cultivated more than 600 grape varieties in the New World. Aligote, Pinot, Rhine Riesling, Chardonnay and other grape varieties became the basis for the best wines. In 1890 the production of wines at the plant was launched on an industrial scale, and in 1896 New World already supplied wines for the coronation of the Russian Emperor Nicholas II. Such fame could not but attract attention to the village. In 1900 it was complemented by the victory of the sparkling wine «Paradisio» at the World Exhibition — the highest rating possible at that time. Since then, the products of the Novy Svet champagne house have been considered elite.
The work on the construction of production, living quarters and tunnels for wine storage was supervised by the Prince himself. It was on his order was arranged for storage and wine tasting Golitsynsky grotto, in which in the Middle Ages was located a Christian monastery, and cut through the now famous landmark of New World Golitsynsky trail, leading through the rock Koba-Kaya. Today Golitsynsky grotto and the trail attract many tourists from all over the world. Tunnels were also dug in this rock to store wines below sea level, which are still used by the factory today.
Today on the territory of the factory there are ancient buildings of the late XIX — early XX centuries. The most striking of them of the plant is the «Visitors’ House», built under the direction of Golitsyn in the late XIX century for employees. It resembles a knight’s castle rather than one of the factory buildings. Romantic, beautiful two-story building with snow-white walls, lancet windows and four turrets decorates the architectural landscape of New World, many people call it the most beautiful building in the city. With a light hand Golitsyn gave the village his castle, which, it seems, simply cannot but exist in such a fabulous place.
After Golitsyn’s death in 1915, the factory was taken over by his daughter Nadezhda, and further historical unrest that overtook Russia — the October coup d’état and the Civil War — suspended its operations for a time. In 1920 the factory was nationalized, then in 1932 the restoration of its work began.
Today the Novyi Svet Champagne Winery continues the best traditions of wine and champagne production laid down by Lev Golitsyn. As before, champagne and wines are produced here by natural technologies, thanks to which the production of the factory is still characterized by the best quality. All coming holiday in Novyj Svet tourists are sure to visit tours of the factory. And in another attractions of Crimea — the house-museum of Prince Golitsyn, located near the «House of Visitors», an exposition of the history of the plant is open and tastings of wines made here are held.
